For Christmas, my husband got me a food dehydrator—something I’ve wanted for ages! I was so excited, not only because it makes dried fruit, veggies, and jerky, but also because I can use it to make homemade fruit roll-ups. And they are ridiculously simple to do, while also being healthier for you…no preservatives or gelling agents as with store bought varieties. And, while having a dehydrator makes it very easy to do, you can also make them with a conventional oven. Here’s how:

Homemade Fruit Roll-ups

Ingredients
2 cups applesauce (I used store bought, but you could make your own as well)
2 cups strawberries, raspberries, blackberries, blueberries or whatever type of fruit you want!

Directions
In a blender, puree the fruit and applesauce until smooth. Taste the mixture for sweetness. Mine did not require any added sweetener, but if your berries are more tart you may want to add a little sugar or agave nectar. I like to leave the seeds in, but you can strain them out if desired.

Fruit LeatherFor The Dehydrator: Spray 2 fruit roll sheets with non-stick cooking spray. Spread the mixture in a thin, even layer onto a fruit roll sheet and place the sheet on one of the dehydrator’s trays. Dry at 135 degrees for 4 to 8 hours, or until the top of the roll is completely dry and leathery. Drying time will vary depending on how moist your fruit was. Once dry, remove from dehydrator and allow to cool, then gently remove fruit leather from the fruit roll sheet, cut into smaller sections, and rollup! Store in a mason jar in a cool, dark place or in the refrigerator.

For the Oven: Line cookie sheets with plastic wrap or silicone baking sheets sprayed with non-stick cooking spray. Preheat your oven to 170 degrees. Spread the fruit mixture in a thin, even layer onto the cookie sheets. Place in oven and dry for 6-8 hours, depending on how moist your fruit was, until the top is dry and it feels leathery. Allow to cool. Once cool, gently remove from pan, cut into strips and roll! Store in a mason jar in a cool dark place, or in the refrigerator.

Tip: you can make your fruit leather more like store bought fruit roll-ups by placing the dried leather onto parchment paper, then cutting into strips and rolling the leather and parchment paper together into a nice roll. This will make the rolls unroll more easily when it’s time to eat them! Just unroll and peel the fruit leather off the parchment paper as you eat.

Cooking Classy’s Slow Cooker Chicken Tikka Masala

I love Indian food, my favorite being Chicken Tikka Masala. Unfortunately, to make it authentically takes rather more time than I generally have. I’ve tried a number of the short cut methods out there, from the Patak’s simmer sauces to McCormick’s spice packs and other options, and none lived up to real Chicken Tikka Masala. But, while messing around on Pinterest one day, I came across a recipe that comes about as close to genuine Chicken Tikka Masala as I’ve ever gotten, without standing over the stove for ages.

It still takes some preparation, but using the slow cooker means you just put everything in the pot early in the morning and then go about your business for the day. The result was a nice thick, creamy sauce with well seasoned, tender chicken. Just add some Uncle Ben’s Basmati Rice in a pouch (cooks in the microwave in 90 seconds), and you have a great meal. Just be careful with your spice level. I prefer things less spicy, so I only used 1/2tsp of Cayenne and I left out the jalapeños (I just don’t like the flavor of them). We were in northern Virginia for 3 days last week to attend my sister’s wedding. It was a great event (complete with 16 bridesmaids and 9 groomsmen!) and everyone had a great time. Now they are on their honeymoon at Jazz Fest in New Orleans before they head back to the Caribbean, where they currently live while my sister attends medical school. Congratulations, you two! I love you!

The Move Has Begun!

The packers are here! And they showed up half an hour early! Our move to Chicago has officially begun. The military thankfully pays for people to come box up all of our stuff, so it’s a lot less work for us than it would be if we were moving on our own. They are packing today and tomorrow and will load our things on the truck on Wednesday. Then, we will stay on base for a few days while we collect any items the movers left behind (they aren’t allowed to pack certain things), clean the house, and bring in carpet cleaners. In the midst of all this, I have an ultrasound to check the baby’s growth. My uterus was apparently measuring a bit large at my last check up. So keep your fingers crossed that the little guy is still looking good!

Once we’re done with the house, we are spending one last weekend here with family and friends, and doing one more meetup with Donovan’s playgroup on Monday before we head out of town on the morning of the 8th. But, we’re not going straight to Chicago. We’re taking a roundabout route, passing through Louisiana to visit my husband’s family for several days before we finally head north to move into our new house in Plainfield, IL (a Chicago suburb).

I will try to post a few things as I am able over the next few weeks, but as you can imagine, internet access and time will be in short supply for a while. But, I hope you’ll all stick around until we get settled and I’m back online. Now I’m off to supervise the packing!
