I had the most amazingly yummy breakfast this weekend, and I was super surprised by how much I loved it! Especially since it’s a Gluten Free Recipe, which I had previously assumed meant not as tasty as regular bread. My mom, sister, and I started the Fast Metabolism Diet last week, which really isn’t a diet at all, but a way to repair your metabolism and live healthy instead of dieting. And the food so far has been amazing! If you’re trying to lose weight or get healthy, I definitely recommend looking into it. Some parts are hard, but overall you get to eat a ton of delicious food and I feel great! But I digress…back to my amazing breakfast.
Berry Nut Butter Toast is my new favorite thing to eat for breakfast—and, quite frankly, I’d totally eat this for dessert, too! And it takes about 2 minutes to make. All you need is three ingredients. Some gluten free bread (we really like the Rudi’s), a bag of frozen mixed berries (the no sugar added kind; preferably without strawberries), and a natural nut butter of your choice (we used organic cashew butter, but I think almond and other types of tree nut butters would be delicious, too).
Just toast your bread and spread 2-3 tablespoons of nut butter on your toast. Then place 1/2 cup of frozen mixed berries in a microwave safe bowl and microwave for about 45 seconds to thaw and create a juicy sort of compote. Spread the berries on top of your nut butter and toast, and enjoy! So easy, and so delicious! I am not kidding when I say I really want to eat this for breakfast every day now. The nut butter gives it a rich, creamy texture and nutty flavor. The toasted, gluten free bread, is actually delicious on it’s own (I really like it better than whole grain wheat breads—we may be switching to this permanently), but it gives this recipe a satisfying, carb-y crunchiness. And the berries give it a great sweetness along with juicy, syrupy-ness from defrosting them.
What I really love about this is how simple it is. In all the diet fads out there, it’s really easy to forget how simple, whole foods are not only the healthiest for you, but often the tastiest too. That’s the biggest thing I’ve learned since reading Fast Metabolism Diet. And I’ll share some more of my yummy discoveries as well as share a summary of my experience with it once I finish the program. But, for now…enjoy some Gluten Free Berry Nut Butter Toast for breakfast or dessert!
Gluten Free Berry Nut Butter Toast
1 slice Gluten Free Bread (sprouted grain spelt bread is best)
2-3 Tbsp natural nut butter of your choice
1/2 cup frozen mixed berries
Toast your bread. Place berries in a microwave safe bowl and heat on high for 45 seconds. Spread nut butter on toasted bread and top with warm berries. Enjoy!
