I tried this White Chocolate Macadamia Nut Cookie Recipe when I was in need of a quick, but tasty treat a while back for some gifts. And Macadamia Nut Cookies are a close friends’ favorite cookie ever! So, he always wants me to make some. But, I was short on time and needed a short cut, so I decided to go the cake mix route. Cake mix is a great way to cut down on all the measuring and need for individual ingredients when you’re baking on the fly. And you don’t have to sacrifice taste either. Most of the cake mix recipes I’ve tried have been really yummy. But, you will get a more cake-y texture than normal so it depends on what your going for. If simple and quick but still delicious is your goal, cake mix may be the way to go.
But for now, give this yummy White Chocolate Macadamia Nut Cookie Recipe a try! It’s really simple to make, and the cookies come out nice and sweet with a soft, chewy texture. And of course, some nutty crunchiness from the macadamia nuts!
White Chocolate Macadamia Nut Cookies
1 Box Yellow Cake Mix
3 Tbsp brown sugar
1/2 cup canola oil
1/2 tsp vanilla
1 tsp almond extract (If you don’t have it, no worries, just add a bit more vanilla)
1 12oz bag of white chocolate chips
1 2oz bag of macadamia nuts, chopped to the size you prefer
Preheat the oven to 375 degrees. In a large bowl, mix oil, brown sugar, eggs, vanilla, and almond extract until the brown sugar is fairly well disolved. Add the cake mix a little at a time, mixing until well combined. Fold in the white chocolate chips and macadamia nuts. Drop tablespoons of dough onto ungreased cookie sheets. Bake for approximately 10 minutes or until lightly golden. Makes about two dozen cookies. Enjoy!
