For my holiday baking last year, I decided to embrace the boxed cake mix as a time saver, and I’m so glad that I did. Not only did it turn out some great cookies, but it was so much easier. And really, what is cake mix but the dry ingredients of a recipe already measured out for you? Simple!
One of the recipes I really liked was this one for Oatmeal Nut Cake Mix Cookies. They were fast to mix, baked up nice and chewy, and were gobbled down by everyone who tried them. And they’re totally customizable! You could easily add raisins, chocolate chips, cranberries, or other mix ins. Omit the walnuts if you don’t want nuts in yours, or substitute pecans if you don’t have walnuts on hand. That’s what I really like about the cake mix cookie recipe…it gives you a great base that you can then make into whatever type of cookie you’re craving!
Oatmeal Nut Cake Mix Cookies Ingredients
1 box Yellow Cake Mix (just the cake mix, not the other ingredients on the box)
2 cups Quick Cooking Oats, uncooked
1 cup Sugar
1 cup Oil (canola, vegetable, safflower…it’s up to you)
1 cup chopped walnuts (or raisins, or pecans, or cranberries, or choc. chips, etc.)
1 1/2 tsp vanilla extract
Preheat oven to 350 degrees. In a large bowl, stir together cake mix, oats, and sugar. Add in oil, eggs, and vanilla, and mix until well combined. Stir in walnuts (or other mix ins of your choice). Drop by tablespoons onto ungreased cookie sheets 2 inches apart. Bake for 11-13 minutes or until lightly browned. Let cool, and enjoy!
