Fall is officially here starting tomorrow! And with fall comes pumpkins! I’m a huge fan of anything pumpkin, and these two ingredient pumpkin cupcakes are ridiculously simple—what could be easier than two ingredients! And they come out soft, chewy, and unbelievably delicious. A great way to celebrate the arrival of Autumn.
Plus, the cupcake itself is relatively healthy for you. Pumpkin is a great source of many antioxidants and vitamins. It’s low calorie. And it tastes great. And you can choose whatever type of cake mix you like. Even go gluten-free or organic to increase the healthy aspect. And you’re leaving out all the eggs and oil that you would normally add to a cake mix. So, there’s not much fat. I often make these and just eat them without icing as muffins.
But, for events where presentation counts, or if I’m making them specifically for a dessert, I go all out and add on the cream cheese frosting. After all, you have to indulge sometimes! And depending on the occasion, they work equally well as cupcakes or cupcake bites. For kids, I like to do the cupcake bites. They’re easier for the kids to hold and most kids don’t finish a full sized cupcake anyway. Here’s what you do:
For the cupcakes:
1 box yellow cake mix
1 15 oz can pumpkin
Preheat oven to 350 degrees. Stir the cake mix (just the mix, not any of the other ingredients the box calls for) and pumpkin in a large bowl until well combined. Fill muffin cups about 3/4 full–use paper liners or grease the cups first). Bake according to the instructions on the box. Most cake mix boxes will tell you how long to bake cupcakes for that mix. Use those directions. Cupcakes are done when a toothpick inserted in the middle comes out clean.
For the Frosting:
1/2 cup butter, room temperature
8 oz cream cheese, room temperature
2 1/2 cups powdered sugar
1 tsp vanilla extract
In a large bowl, beat butter and cream cheese with an electric mixer until well combined. Beat in vanilla. Add powdered sugar a little at a time until it reaches your desired sweetness. Frost cupcakes as desired.
