I love pretty much anything that’s “pumpkin spice,” but I don’t always have a ton of time to bake something with a bunch of different spices and other ingredients, which is why I love this recipe for pumpkin spice muffins that only need two ingredient. That’s right, just two!
I’ve been making various varieties of these pumpkin muffins for years, but the pumpkin spice version is my favorite so far. They are quick and easy, great for taking to holiday parties, and you can even make them pumpkin spice cupcakes by adding some cream cheese frosting for a fabulous holiday dessert. Everyone I’ve ever served them to says they are absolutely delicious, and they’ve been shocked when I tell them how easy they are.
Here’s what you do:
Preheat oven to 350 degrees
Take one box of Spice Cake Mix and dump the mix into a bowl
Add one 15 oz can of pumpkin
Stir until all of the cake mix has been absorbed by the pumpkin into a thick batter
Spoon the batter into a muffin or mini muffin pan, filling each cup right to the top
Bake 18-20 minutes for muffins or about 15 minutes for mini muffins or until a toothpick inserted in center of muffin comes out clean
Let cool, frost if desired, enjoy!
That’s it! No adding eggs or oil or spices or anything. Just cake mix, pumpkin, and stir. You can use any type of cake mix you’d like. For just a pumpkin muffin or cupcake as opposed to a pumpkin spice muffin, use yellow cake mix as I did here: Easy Pumpkin Cupcakes. A friend of mine tried it with a gingerbread cake mix and said they were fantastic. It’s really up to you! Create a moist, delicious, cupcake super fast!
